I Actually Can’t Stop Making this Soup

Ok where are my soup girlies at? Soup it a great way to fill up, get in veggies, and stay hydrated at the same time. Plus it’s so comforting this time of year. One of my personal favorites is Golden Garlic Soup – a simple, nourishing dish packed with the healing power of garlic, turmeric, and hearty potatoes. This flavorful, creamy soup is not only a comfort food but also a natural way to boost your immune system and get in anti-inflammatory properties. Plus, you don’t need much.

Ingredients:

  • 1 whole head of garlic, peeled

  • 3 medium potatoes, peeled and diced

  • 2 medium onions, finely chopped

  • 1 tsp turmeric powder

  • 1 tbsp olive oil or butter (for sautéing)

  • 4 cups vegetable or chicken broth

  • Salt and pepper to taste

  • Optional: Fresh herbs (like thyme or parsley) for garnish

Directions:

1. Sauté the Onions and Garlic

Heat the olive oil (or butter) in a large pot over medium heat. Add the chopped onions and sauté until they become soft and translucent, about 5 minutes. Next, add the peeled garlic cloves. Cook for another 2-3 minutes, stirring occasionally, until the garlic becomes fragrant but not browned.

2. Add the Potatoes and Turmeric

Once the garlic and onions are soft and aromatic, add the diced potatoes and turmeric powder. Turmeric not only gives the soup its beautiful golden color but also adds an anti-inflammatory boost. Stir everything together, letting the turmeric coat the vegetables.

3. Pour in the Broth

Add the vegetable or chicken broth to the pot, ensuring the potatoes are fully submerged. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender and easily pierced with a fork.

4. Blend for Creaminess

Once the potatoes are cooked, remove the soup from the heat. You can use an immersion blender to puree the soup directly in the pot, or transfer it to a blender in batches. Blend until the soup reaches your desired consistency – smooth and creamy or with a few chunks left for texture. This step it totally optional.

5. Season and Serve

Taste the soup and add salt and pepper as needed. Ladle it into bowls and garnish with fresh herbs if you like. Serve hot and enjoy the comforting warmth of this golden garlic soup! I like homemade croutons on top.
